Fruit cake with organic dried fruits

At Christmas there is a great variety of dishes to share between families; some of those that have more tradition are the fruit cake. This cake is usually made with organic dried fruits. This cake has been around for hundreds of years, so there are hundreds of different recipes.

The origins of this cake began in ancient Rome, it became a mass in which pine nuts, raisins and pomegranates were added to give it a better flavor; later in the middle ages they began to add honey and fruit. Later, they began using sugar in fruits, creating candied fruits in the cake; this allowed the cake to last longer and in this way more people could enjoy this delicacy.

The fruitcake was banned for some years because it was considered to be a luxury and ostentatious so it was only allowed to consume it at Christmas or at large parties such as weddings. For this reason, over the years the fruit cake is considered a Christmas dessert and always during this time we can find it in millions of stores, with different styles, but always remembering its Roman origins.

In this post we want to share with you two fruitcake recipes for you to choose your favorite, using organic dried fruits.

1. Traditional fruit cake

For this recipe you will need: 6.33 fluid ounces of rum, 8.92 ounces of dehydrated apricot, 8.92 ounces of dehydrated apple, 6.69 ounce raisins, 3 eggs, 0.26 ounces of orange zest, 5.35 ounces of butter, 8.92 ounces of flour, 0.26 ounces of cinnamon and cardamom powder, nutmeg, ground clove, 8 ounces of sugar, vanilla essence and salt.

The first thing we should do is place the organic dried fruits in a pot, add the orange zest, the rum and leave at medium temperature for 5 minutes; remove it and store it in the refrigerator for 24 hours.

After 24 hours, remove the pot with the organic dried fruits from the refrigerator to increase its temperature. Turn the oven to 356 F. Place the flour, cinnamon, cardamom, nutmeg, clove and stir in a bowl; in another bowl beat the sugar with the butter until it sponges and add the eggs, vanilla and salt; continue beating, add the flour that was in the other bowl until everything has been incorporated uniformly.

When you have dough, add the fruit and mix it with the dough. Prepare the mold where you will place the fruitcake with butter and waxed paper so you can remove it without sticking. Place the dough in the pan and bake for 15 minutes; then low the temperature to 302 F and bake it for an hour and a half. To know that it is ready insert a toothpick, if it comes out clean, it means that you can take it out, let it cool down and be ready to share it with your loved ones during this holiday season.

Mini fruit cake

The second recipe we want to share is a pancake of fruitcake, this dessert is very easy, but you should also start with a day in advance for the ingredients to mix. For this recipe we will need: 3 cups of organic dried fruits, ¾ cups of brandy, 2 sticks of butter, 1 cup of sugar, 1 tablespoon of cinnamon powder, ½ teaspoon of baking soda, ¼ teaspoon of clove and nutmeg , 2 eggs, ¼ cup of milk, 1 cup of flour, nuts. To decorate you will make the icing you will need: 2 cups of icing sugar, 3 tablespoons of milk, lemon juice, 1 teaspoon of vanilla (you can add food coloring if you want it green or red).

One day before, place the organic dried fruits with the brandy in a covered pot, let stand for 24 hours. The next day, turn on the oven to 350 F; put butter in the mold you will use for the mini cakes, or a mold for a larger biscuit.

The first thing you have to do is stirring the butter with sugar, cinnamon, cloves, nutmeg and baking soda; to this mixture add eggs and milk. Then add the flour and fruit with the Brandy, when the dough is ready, add the nuts and bake for 35 minutes.

To prepare the frosting, in a bowl place the icing sugar and beat until there are no lumps, add the tablespoons of milk and beat until they are well mixed (you can add more milk or put less milk depending on the consistency you want). Then, add the lemon juice and then the vanilla extract (this is optional); if you want to add food coloring is the last step. Finally, you need to place the icing on top of the mini cakes.
